I'm back again to tell you about a great attraction in Rotorua called Happy Ewe Cycle Tours. This is run by an enthusiastic young man called Roger Martin, who will take you on a magical bike tour of the most beautiful parts of Rotorua city. The bike tour includes Ohinemutu, Kuirau Park, Lake Rotorua, thermal areas and Government Gardens. All you need to have is a reasonable level of fitness. Roger will provide you with a helment, a bike and then, off you go! The tour takes 3 hours and departs twice daily from the Information Centre on Fenton Street.
After your bike tour, you will no doubt have a bit of an appetite, so here are a few places that I would recommend: Capers, Scope or Picnic. If you are looking for somewhere a bit quieter or off the beaten track, visit The Distinction Hotel on Fenton Street. You can enjoy a delicious high tea, choose something from the menu or from the cabinet. The selection in the cabinet is not large, but includes beef lasagne, vegetarian lasagne, a selection of salads and sweets, and the portions are substantial, delicious and well-priced. I recently had lunch here and loved the ambiance with views of native plants and the swimming pool, which you are also welcome to use prior to or following your lunch.
Here's my recipe for Fudge Brownie: Put 200g melted butter, 2 cups Caster Sugar and 3 eggs into an electric mixing bowl, and mix on high speed for 20 minutes. Add some vanilla essence, mix for a few seconds and then add 1 cup of sifted cocoa. Mix slowly for a few seconds and then give a quick mix until it comes together. Remove the mixing bowl and add 3/4 of a cup of sieved plain flour, folding in by hand until mixed. Pour into a round or square 20 x 20 cm tin and bake in a pre-heated oven at 150 degrees Celsius for 40-45 minutes. Dust with icing sugar when cooled.
